IDENTITY

FARMERS is the result of an original, ambitious and unique project. The concept of “Sosteria Agricola” manifest itself in a sustainable, nonindustrial and “farm-to-table” restaurant.
The business project was born thanks to 3AQS - Authentic Food of Superior Quality Association - with the idea of creating a new food-service model focused on small local farmers and on agricultural products of high and sustainable quality, through a relationship of trust with city-based customers. The idea was put into practice jointly with some small food and wine manufacturers from Lazio who decided to join in order to create a shared store where customers could know, without filters or intermediaries, their products, their roots and their stories. In a metropolitan context, in direct contact with people, with a short value chain system, FARMERS, the first Sosteria Agricola, offers the best local organic and sustainable products, coming daily from the countryside of the region, respecting the crop calendar.

The place

Farmers - Sosteria Agricola-  offers about 80 seats on a surface of 150 square meters , with an exterior space where you can easy wait for train departures or arrivals , meet up with friends to taste the quality of regional products or took part to our often scheduled tasting events. Farmers’ furniture respects and express high quality standards and tradition. Tables and shelves are entirely made of recycled wood treated with natural and non-toxic products. All furniture is fully restored according to sustainability values. The LED backlighting allows a considerable energy saving and the disposable tableware is fully recyclable and compostable.

The kitchen

With the “tavern with kitchen formula” we offer traditional regional dishes daily, cooked with fresh and strictly selected products by 3AQS, respecting sustainability, high quality and authenticity values. At Farmers you can find different types of handmade pasta from regional manufacturers - for example, pasta made with the ancient “Senatore Cappelli’s wheat flour” or with the unique hemp flour, handmade by “Selva Cimina” from Canepina, native place of “fieno”, a traditional variety of pasta.
At lunch or dinner, leaving for or returning from a business or pleasure trip, at Farmers you can eat typical pasta from Roman tradition, dish of the day, fresh ground beef  burgers and meat from local high quality selected farms, seasonal vegetable side dishes, vegetarian and vegan dishes, homemade bread and pizza with strictly selected flours, yeasts and cereals. Farmers proudly serves in glass or sells in bottle some of the best local wines, produced by bio-farm Trebotti and high-quality craft beers from Treefarm, both on tap and bottled.

The bar-Cafeteria

Our bar-cafeteria offers delicious breakfast (continental breakfast as well ). You can also find our bio and fair trade coffee made with the precious mixtures from “Caffè Haiti Roma”, our high quality milk delivered by local farmers and our homemade sweets. Never fail bio and high quality juices and drinks, gourmet sandwiches and take away food.

The shop

You can also buy wine ,extra virgin olive oil, honey, beer, coffee, pasta, preserves, meats, cold cuts, cheese and any other product supplied by manufacturers and members involved in our project, simply choosing from shelves and displays arranged along the walls, reviving an imaginary gastronomic journey through the most beautiful countryside and villages of  Lazio. Very often you can personally meet the producers, for instance during our tasting events organized in order to fill the gap between customers and manufactuers.

3AQS was born with the desire to select italian food productions reaching high standards in quality of taste, in research of Raw materials, in organic and sustainable methods of agriculture and in historical and geographical product’s culture, to offer manufacturers strong commercial opportunities and to let customers know about genuine food of Italian tradition.

3AQS and Farmers Roma propose an innovative collaboration in order to increase small manufacturer’s visibility in a large metropolitan area. The contacts and the management is done directly through the association that is a non-business entity and there are no intermediaries .

OUR AGRICOLTURE

In 2003 Botti family decide to found the organic farm Trebotti. The Botti siblings thus became the TREBOTTI, a trio of young entrepreneurs with the ambition of building a state-of-the-art winery based on organic and sustainable agriculture. TREBOTTI found the ideal location to fulfil their project in the hills overlooking the Alviano Natural Reserve, stretched across the municipalities of Castiglione in Teverina and Civitella D’Agliano.

OUR WINES

TREBOTTI has formed a strong bond with the Tiber Valley and its territory, and this is reflected by the farm policy to almost exclusively grow indigenous vines that are deeply connected to the local winemaking tradition. The grape varieties of choice are Violone, Sangiovese and Aleatico for red wines, and Grechetto and Trebbiano for the white ones. The only exception is represented by Manzoni Bianco. Originally from Veneto, it was created by Professor Luigi Manzoni, a relative of Mrs. Giulia. Aleatico grape variety has been the core of young Ludovico's bachelor thesis in agricultural sciences, who after a research lasted three years succeeded in creating the clone selection Aleatico di Gradoli. 

OLIVE OIL, HONEY AND OTHER DELICACIES

TREBOTTI also started a small organic production of honey and extra-virgin olive oil. Additional products are the Bludom jelly, the honey-dipped hazelnuts, the honey and hazelnut cream and the organic Bludom-soaked pecorino cheese. Wine, honey and olive oil are three of the more noble and evocative products of Italian agriculture and deeply bond together nature, tradition and search for the highest quality: three values and aims upon which the TREBOTTI organic farm built its philosophy.

We want to cultivate and produce, on our own or collaborating with other brave farmers, genuine and natural food to put on families table. We started with extra virgin olive oil, craft beer made with wheat and malted barley, organic stone-grounded flour and organic wine.

THE ORGANIC CHOICE

The natural result of our constant searching for quality in all aspects of our work, brought us to propose a coffee coming from eco-friendly plantations, where the natural cultivation system, completely free from toxic substances, helps to maintain the balance of the ecosystem. From this type of research is born our coffee blend Caffè Haiti "BIO", a 100% organic blend of 100 % Arabica.

FAIR TRADE

Coffee has always played a central role in fair trade, the trade that takes into account the working conditions and exploitation of people involved in the cultivation and marketing of the raw material. Just because of this symbolic value of coffee we are planning to include in our catalogue several certificate fair trade coffee blends.

THE FARM "SELVA CIMINA"

On the hills surrounding the small medieval town of Canepina, at the slopes of the ancient selva Cimina (Cimina wood) described by the great Roman historian livy as "the most impractical and scary forest of Germany", Arletti Brothers Felice and Giuliano continue an old family tradition, producing and transforming chestnuts, hazelnuts and olives.

We believe in tastes kept by our territories and our local traditions. We love to transform natural products in order to give food a value added. We believe in the importance of cultural, social, nutritional and environmental value of food. We want to go beyond the recipes because eating is much more than feed on.

HEMP, NUTS, CHESTNUTS, EXTRA VIRGIN OLIVE OIL AND HAZELNUTS

Awareness of our origins (Canepina) and of our tastes, love for our work and natural products daily animate our gastronomy, putting on table the authenticity of our territory, the Cimina.
